A native of Mexico finds freedom, passion in food in the U.S

Ricardo Santos started J. Zapata, his Mexican food business, out of a motor home with little experience in the kitchen.

Now, he operates three trucks and two physical locations serving original, authentic dishes.

“You need to have a purpose in life,” Santos said. “My purpose is to be happy, and my passion is cooking. I love what I do. When I get into the kitchen, it’s my world, my life, my control and my happiness.”

“It was uncomfortable,” Santos said. “It was not what I expected, but my father gave me the skills: Don’t give up.”
